Cotton

People unfamiliar with the region may be surprised to find cotton growing in Eastern New Mexico and West Texas/Panhandle, but it's been a serious crop here for close to a century.
Less thirsty varieties have been developed over the years and much of the cotton produced here is done in the dryland method. Of course, drought resistant isn't drought proof and cotton suffers, just like every other crop, without water.
I have also heard tell that the region is inhospitable to many of the pests that plague growers in more traditional cotton producing areas, so we got that going for us.
